April Book List

It Ain't All About the Cookin'; Paula Deen A Memoir.  I've had this book for a couple of years and finally decided to read it.  It's about her life, where she comes from and how she became a cook and TV celebrity.  You really have to admire this woman, she came along way raising two boys on her own.

Christmas with Paula Deen.  This is mostly a recipe book, but it has stories of Christmas traditions she shares with her family.  Cute little book with lots of good recipes in it, and some traditions I may start in our family.

Parenting Is A Ministry; Pastor Craig Castor of Family Discipleship Ministries.  This is actually an online course to learn biblical principles for parenting.  It's very informative and I've learned ALOT!!  Recommended for anyone with children.  Go to http://www.parentingministry.org/ if interested.  They also have a marriage course that I'll be doing in the future.

One Good Dog; Susan Wilson.  I'm half way through this book, and have enjoyed it so far. It's about a man and a dog who find themselves needing one another.

Computer Problems ...

We are going to have to do something with our computer, it's been down for over a week.  And today it mysteriously decided to work again.  This is the 3rd or 4th time it's done this.  I will get back to posting recipes and such (as long as this computer of mine keeps working) this weekend.

Unstuffed Pepper Bake

I don't much care for stuffed peppers, but this is yummy.  I doubled the recipe when I made it and froze the other half.

1 lb ground beef (I used 1/2 beef & 1/2 ground turkey)
1/3 cup onion (I used 1-1/2 medium onions)
1-1/2 cups bell peppers, ( I used red, orange & yellow)
2 garlic cloves minced or 1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
14.5 oz can diced tomatoes, drained
1-1/2 cups instant rice ( I used brown rice)
1 tsp worcestershire sauce
1 tsp italian seasoning
8 oz shredded sharp cheese
15 oz can tomato sauce

Preheat oven to 375*

In a large sauce pan over medium high heat, saute onions, peppers and garlic.  Add ground beef, cook until browned and vegetables are tender.  Drain off any excess fat and season with salt and pepper.

Stir in the tomatoes, rice, worcestershire sauce and italian seasoning.  Remove from heat, and stir in 1 cup cheese. 

Spread mixture evenly into a 13x9 baking dish and top with tomato sauce and remaining cheese.

Bake uncovered for 20 minutes on center oven rack, until heated through and cheese is melted and bubbly.  Let stand 5 minutes before serving.

Family Inspiration - 6 APR

Children need parents who can go for casual walks and talk about fishing and stuff like that ... and slow down to look at pretty leaves and caterpillars ... and answer questions about God and the nature of the world as it is.

Grilled T-Bone Steaks

Didn't do a lot of cooking this weekend, because we worked in the yard and garden.  But we did make time to grill some delicious T-bone steaks and veggies .... yum

T-Bone Steaks
Sea Salt
Pepper

Sprinkle steak generously with sea salt, then sprinkle with pepper to your taste.
Grill on high heat till seared on both sides, lower heat to low, let cook for 2-3 minutes on each side.
Remove from grill, let stand 20 minutes wrapped tightly in foil. 
This will give you a medium to medium rare steak depending on the thickness of your steak.  If you like a more medium to medium-well steak cook on low for an additional 2-3 minutes.

Any combination of veggies you like ..  Zucchini,  peppers, onion, mushrooms, etc.
Cut all to about same size, toss with olive oil and salt & pepper.
Grill on foil till done, about 10 minutes.
